Preheat oven to 425°F.
Cut bacon slices in half to create shorter slices for wrapping dates.
Wrap each date with half of a slice of bacon and secure with a toothpick.
Bake 15 – 18 minutes total, turning the dates approximately halfway through so the bacon is evenly cooked.
Remove from oven and sprinkle dates with Kosher salt, if desired, to taste.
Serve warm or at room temperature.
