BBQ Pulled Turkey Wraps

A large crockpot can handle most of the heavy lifting in this recipe that wraps up barbecue pulled turkey, tangy pickles and creamy slaw.

Ingredients

4 pounds of sliced turkey

5 cups barbecue sauce

½ cup mayonnaise

½ cup apple cider vinegar

1 tablespoon honey

4 cloves garlic, minced

2 tablespoons each salt and pepper

4 cups coleslaw mix

2 cups sliced pickles

16 large tortillas (10-inch)

Directions

Step 1

Place turkey in the basin of slow cooker. Pour barbecue sauce over the top. Cover and cook on low for 4 – 6 hours or high for 2 -3 hours or until turkey is very tender.

Step 2

Remove turkey from slow cooker. Let stand for 10 minutes. Shred turkey and return to cooking liquid in slow cooker. Set slow cooker to warm.

Step 3

Whisk together mayonnaise, sour cream, vinegar, mustard, honey, garlic, salt and pepper until blended; toss with coleslaw mix.

Step 4

Spoon pulled turkey and sauce down along center of each tortilla. Top with coleslaw and pickles.

Step 5

Fold up bottom of tortilla over filling, then fold in sides and roll up tightly like a burrito.

Tips

For a spicy kick, stir in 8 canned chipotle peppers into barbecue sauce before adding to slow cooker.
