Chorizo Breakfast Burritos

These filling, three-ingredient burritos are the perfect grab-and-go food for hungry breakfast-seekers on the run.

Ingredients

½ pound chorizo

6 flour tortillas

½ cup Queso Oaxaca (or mozzarella)

8 eggs

Salsa verde, on side (optional)

Sour cream, on side (optional)

Pico de gallo, on side (optional)

Directions

Step 1

Fry the chorizo in a large nonstick skillet crumbling it until cooked thoroughly for 8 – 10 minutes.

Step 2

Meanwhile, in a medium bowl, whisk eggs then add them to the skillet and combine for 2 – 3 minutes or until eggs are cooked thoroughly.

Step 3

One by one, heat tortillas on griddle or large flat pan. Once tortilla gets warm, spoon chorizo-egg mixture down the middle of the tortilla, add a spoonful of cheese and spoonful of salsa, if using.

Step 4

Fold in tortilla edges and roll. Heat on griddle or large flat pan, seam side down, and cook until the bottom of the burrito is golden brown, about 1 – 2 minutes. Flip the burritos over and cook other side for 1 minute until golden brown.

Step 5

Serve immediately or wrap in parchment or foil for later consumption.

tips

Chorizo and eggs can be cooked in advance to reduce preparation time during busy service.
