Directions
Step 1
Preheat oven to 400°F.
Step 2
In a large bowl, whisk together eggs, cream, 3 tablespoons parsley, 3 tablespoons scallions, 2 tablespoons chives, ½ teaspoon salt and ¼ teaspoon pepper.
Step 3
In large ovenproof skillet set over medium heat, add 1 tablespoon olive oil. Add ham and cook, stirring occasionally, for 3 – 5 minutes or until ham starts to brown.
Step 4
Pour egg mixture into skillet and cook, undisturbed, for 1 – 2 minutes or until edges begin to set. Sprinkle goat cheese evenly over top and transfer to oven.
Step 5
Bake for 15 – 18 minutes or until eggs are set, puffed and golden; let cool slightly. Carefully transfer frittata to serving platter.
Step 6
In a medium bowl, stir together arugula, the remaining oil, lemon juice, remaining parsley, remaining scallions, remaining chives, remaining salt and remaining pepper. Top frittata with arugula mixture.
tips
This frittata is also delicious drizzled with reduced balsamic vinegar or a dash of hot sauce.
Add sliced mushrooms or chopped asparagus with the ham if desired.
